Hey, it's Chelsey Rene, afternoons on EASY!
In case you missed it...
- I finished The Coworker by Frieda McFadden, and I didn't waste anytime before moving onto Ward D by her. I'll try to finish that one quickly as well, which is never hard with her books, so Mom and I can start The Nightingale by Kristin Hannah.
- I made these Carrot Cake Cupcakes from The Pioneer Woman the other day, and they were delicious! I made a few adjustments:
- I halved the recipe so we didn't have as many.
- Since it's hard to half an egg, I used one egg and 1/4 cup applesauce. Applesauce is a great substitute for egg. I make that switch a lot, and I realize now that I still didn't half the eggs in this recipe... since one egg is = 1/4 cup applesauce... it still worked out though. LOL.
- We skipped the icing too, and they still tasted yummy.
- You may notice I'm no longer keeping track of my weight loss. While I'm still working on it, I realize that what I was doing last year isn't working for me this year. That's been difficult for me to process, and seeing the frequent ups and downs makes it harder for me to stay in a positive mindset about it all. I'm hoping that just by focusing on being healthier - eating better, eating less highly processed foods and moving more - I'll start losing again. I've also got to keep telling myself it doesn't happen over night, and it won't disappear quickly. If you're on this journey with me...I feel you! We've got this.
